I must say, I'm quite surprise about the Shabbat flight, and that it isn't operating days 7/2/4 like BOS, PEK, and LAX & YYZ in the winter. Very inefficient use of the 772 IMO, it will only be available for a Europe flight on days 2 & 4.

Very surprised they are choosing to go Monday, Wednesday, Friday and therefore have a plane sit at MIA for 1.5 days instead of going Sunday, Tuesday, Thursday and not having that problem.

The schedule is incredibly similar to the old schedule. When it launched in 2006, it was:

LY 101 TLV 0110-0820 762 TuFr

LY 102 MIA 1330-0840 762 Tu
LY 102 MIA 2330-1840 762 Sa

Miami is a major aviation maintenance hub - arguably along with Hong Kong it is the center of this industry - so El Al could take advantage of that and rotate 777s for some overnight maintenance.

Actually the choice of days seems fine to me. LAX, BOS, YYZ are all 247, so this seems to balance a bit the operation days of north-america flights.

That's it! I remember the old schedule. This is where they flown it before and they pulled out of MIA completely. Due to high cost of the fuel.

What I don't understand is how come TLV-MIA is scheduled to take 14:05 hours, but the return is scheduled to take 11:45...

Even with the jetstream, 2hr 20min is a lot longer for one direction over the other. For comparison, DL only adds an extra 1hr 10min for TLV-JFK and QR only adds an extra 1hr 35min for DOH-MIA. For a flight like TLV-MIA, an extra 1hr 15min to 1hr 30min should be sufficient. Some airlines add extra block time into their schedules for one way and not the other to allow for shorter connections, because of specific airports issues, or to account for delays.
