bmi or easyJet
I'll be staying in a hotel in County Hall area... bmi flight to EDI is at 0640 while easyJet is 0800ish.
Considering the ease of getting to the airport, which one would you recommend?

BMI fly to Edinburgh from both Gatwick & Heathrow, whilst Easyjet fly to Edinburgh from Gatwick, Stansted & Luton.
Always assuming of course OP is talking about County Hall in London
I think a bit more information is needed from OP.
Personally I'd go for the later flight as it's more likely that they'll be public transport from County Hall to Victoria (for Gatwick & Stansted), Liverpool Street (for Stansted) & London Bridge or Kings Cross (for Luton).

I decided to forgo the flights and take that ScotRail sleeper service from Euston. That works out perfectly for me... don't have to get up at an un-Godly hour in the morning in order to make it to the airport.
Train leaves at 2340 or so, arrives around 0700 - perfect for me. (And save money on the hotel)

If your hotel won't store your bag, or it's inconvenient, then store it at Euston. It's the same company that runs the baggage storage at Heathrow and Gatwick. Opening hours: Mon-Sun 0700-2300, situated in the main concourse at platforms 16-18. Other locations are on their website.
