buzzword for waiter for preparing fish w/out oil, etc.?

buzzword for waiter for preparing fish w/out oil, etc.?

I like fish, but I don't like oil, butter, etc.

Whenever I try to explain this to a waiter, I just get a confused stare in reply.

What method of preparing fish is the healthiest, and is there a buzzword that I can use to describe this method when at a restaurant?

I would think that steamed fish would be good - it would need no oil, butter, etc to prepare.

Olive oil is heart healthy, but if you don't want oil at all, then I'd agree with Non-NonRev. Just ask them to steam it. Poached fish would be another possibility.

Here is a method for poaching salmon:

Ingredients
1 to 1½ pounds salmon fillets
½ cup dry white wine (a good Sauvignon Blanc)
½ cup water
A few thin slices of yellow onion and/or 1 shallot, peeled and sliced thin
Several sprigs of fresh dill or sprinkle of dried dill
A sprig of fresh parsley
Freshly ground black pepper

Method
Put wine, water, dill, parsley and onions in a saute pan, and bring to a simmer on medium heat. Place salmon fillets, skin-side down on the pan. Cover. Cook 5 minutes or to desired done-ness. Do not overcook. Serve sprinkled with freshly ground black pepper.

Serves 2-4.

Poached fish is frequently ordered as in "poached salmon". I prefer it.

Do you generally add oil or butter when broiling? I do not.

I will usually add a little olive oil, salt and pepper
