How do you prepare your turkey for Thanksgiving?

Last year I tried using an aged dry brining process. You remove the backbone so the turkey is butterflied and rub a generous amount of salt and herbs under the skin and leave it in the refrigerator for a few days. Before cooking I covered it in a lot of butter. You bake it at a very high temperature and it cooks in less than two hours. The result was a very moist and flavorful bird. I'll never go back to using a wet brine again. This method is a lot easier and faster.

Rub a generous amount of dry rub inside the cavity, on the skin and even under the skin. Leave to marinate overnight.

Take out of fridge 1.5hours before cooking to bring to room temp, towel dry and then deep fry it. Takes 45 mins and it the best way to cook a turkey.

Moist in the inside and crispy skin to snack on.

My favorite thing to make for Thanksgiving dinner is reservations.

Actually I'll be alone for Thanksgiving for the first time in my life. I may just pick some place with a buffet and sit at the bar all day.
