Best guide by far is Venezia Osterie & Dintorni. by micheia scibilia. is expensive € 12.50. is available in english.

If ever there was a symbolic sign of the times for American travelers, it was the cardboard notice that appeared this April on the front door of Harry's Bar in Venice, Italy.
“In an effort to make the American victims of subprime loans happier,” declared the sign, “Harry's Bar of Venice has decided to give them a special 20 percent discount on all items on the menu."
Harry’s Bar, a Venice institution once frequented by Ernest Hemingway and other members of the Lost Generation who came to Europe between the wars to take advantage of the dominant dollar, was now offering tourist food-stamps to Americans.

Alle Testiere (tiny restaurant, reservations essential, superb seafood).
Fiaschetteria Toscana (sit downstairs). Amazing homemade Gnocchi. Great seafood. Have Apple cake for dessert
Marisa: :You have to know someone who knows someone. Amazing restaurant and very inexpensive. Near the Three Arches Bridge. Ask a watertaxi driver or a working man about this restaurant, Concierges don't know about this restaurant. Or if they do, they don't share the info.
Osteria Bea Vita: in the Jewish Quarter. Friendly, local trat.
Harry's Bar: A legend: go there for a Bellini, sit downstairs and split an entree
