Most frogs consumed in Provence or elsewhere in France are shipped over from China. I'd say if you're going to have Chinese frogs you should try a Chinese recipe (I'm probably biased because I was made to eat a mousse made out of Frogs legs in France when I was too young to appreciate it)
Better than a mousse made out of mouse. or moose.

The Fajaran restaurant in Jakarta has some of the best frog legs (and Hainan Chicken Rice) I have ever had. ^

Fried or in garlic

Best I've had were some the fried variety in the southern part of the US and some in Lyon, France baked in lots of garlic....both quite tasty
