Most every US kid grows up using ketchup with fries and tartar sauce for fish.

Sour, like the flavor of vinegar is not a common component of American cooking. The best vinegar dish I can remember as a kid is when my mom would whisk & heat vinegar, Worcestershire sauce, dry mustard, & oil together and it would be served over London broil. Fantastic. I still make it but only when Mrs. Sweet Willie is not around as she doesn't like much vinegar.

I've found some of the best fish and chips at Catholic Church fish frys during Lent. Although, it's usually bring your own malt vinegar.

I do... I always thought it was odd until I tried it a few years ago. Now, I won't order fish and chips unless they have malt vinegar. :D

If anyone ever makes it to Yuba City, CA, there's a bit of a Fish and Chips war going on in the town.

First, there is a restaurant run by a Korean family called London Fish and Chips - the place is a bit of a tip and the chips are rubbish, but the fish is excellent - they use pollock and a nice light batter.

Next, there is an old pub called Padres that has recently been taken over by a Sikh family from Coventry, and they are trying to give the place a more authentic flavour. Their Fish and Chips is still a work in progress since they are using Steak Fries for the chips, but the fish is fried and served as an entire fillet. The batter, while not as good as the other restaurant's, is still very good and all in all this place is highly recommended.

Thrashers French Fries, on the boardwalk in Ocean City, MD, serves nothing but french fries and only offers two condiments: salt and apple cider vinegar. Ketchup is not offered. And they've been in business since 1929.

I prefer malt vinegar on fish and fries and always keep a bottle handy.

More on topic, the best fish and chips I ever had was some out of the way, hole-in-the-wall joint in landlocked Kansas City, MO of all places. The fish was cornmeal-battered catfish and both the fish and the fries were crisp, exceptionally flavorful and not greasy in the slightest.

But I can't remember the name of the place......:(

I for one am very impressed that you keep a bottle of malt vinegar handy. Do you mean that you travel with a bottle of malt vinegar? Only a true F&C Officionado would do that.

A Salt and Battery
 
I'm in NYC this evening and after many failed attempts I finally got to try out A Salt and Battery Fish and Chippy (112 Greenwich Street). The shop itself is pretty spartan, but it's clean, the Fish and Chips are pretty good, and the employees are imported from Britain, so the atmosphere is quite authentic too. Unfortunately they don't serve cod, but use Pollock as the principle fish. 9 out of 10.

There was a chain called Arthur Treachers, I have no idea if it still exists. The first time I ever had F&C was there, possibly outside Des Moines, IA. I don't remember anything about the meal except that every table had a bottle of malt vinegar and the fish tasted better with than without.
