I had an excellent spinach and feta omelette the other morning...

Normally I prefer lots of cheddar and a meat product, usually ham or bacon.

I saw a strange thing in the Hilton La Jolla on Saturday: someone put chocolate into her omelet. I haven't tried that, but imagine it couldn't taste too good.

It's hard to choose one type of omelette. My staple is bacon, mushrooms and swiss, but I do so enjoy a nice spinach and feta omelette. Heck, I wouldn't turn my nose from a slice of Velveeta folded into an egg.

Version B: The house-made 'corned beef hash and swiss cheese' omelet at Original Pancake Houses

The "works" added to the those non-cholesterol containing substutute substrate--"egg whites"--. When to eat such ommettes... almost any time of the day or night. :p

Only possibilities:

1. Basic, fluffy, with tarragon, preferably fresh. Can sub herbs d' provance, but not as good.

2. With gouda, so it can be still sort of runny but not dangerously uncooked.

3. Okay, tarragon and gouda work.

4. With Victoria brand green salsa in the bottle (this is GOOD, but don't combine with above.)

5. If ordering from a restaurant, with ham period. Don't trust them with cheese unless you're fond of rubber.

Frittatas: Ah, there's another story and all the rules go out the window. You can put darn near anything in a frittata and it will taste great. Not so for omelets.

Quiche - a whole other story.

Ooooh, that sounds good.

Usually just stick to a ham/sausage, cheese, bell pepper sort of thing, but I do occasionally enjoy a chili/cheese omelette as well.

Egg white omelette with real fresh turkey, avocado, mushrooms and onions with a side of fruit. If you're in Southern California, there's a place in Costa Mesa/Newport Beach on Newport Blvd called the Side Street Cafe that has this on their menu along with many other delectables!

Mouth waters at the mere thought of it.

YES! When there for the first time a couple weeks ago for brunch, after it was on the Food Network... fun eclectic place, good food. I forgot what I had, but I definitely added avocados to it. How California.

Since this thread first ran, I have been cooking up all these different omelets. My husband thoght he died and went to heaven. The one he seems to like the most is Onion, red pepper, garlic powder,a good cheese, shredded turkey (really fine) and tomato on the side

It's all about the GREEK omelet! Spinach, melted feta, and sauteed onions.

Coming in at a distant second, at Lou Mitchell's restaurant in Chicago (one of the world's great diners, open only for breakfast & lunch), they make an exquisite omelet with tart Michigan apples and cheddar cheese.

If I had to choose a third, the salami & eggs with plenty of onions at a good Jewish deli is always a solid choice. Rye or pumpernickel toast on the side is essential.

The AA First Class Omlet
 
I love the Spanish Omlet you get on American Airlines with cheese,beans,rice,steak,olives and other goodies it's like a burrito. I am sort of picky that the omlet has to have cheese in it as I feel it's bland without it.An interesting addittion to the AA omlet would be adding tortilla strips inside the omlet. And a good omlet needs to be served with potatoe's O'Brien with ketchup,onions and tobasco sauce(: Served with a mimosa.

I am certainly into the move savory fillings. I love goat cheese, mushrooms, tomatoes, green onions, spinach, etc. Obviously not all at once. :p

I think it comes from my aversion to "mixing" certain foods, but I don't care for omlets - I like my scrambled eggs, but I like them plain. I love a lot of the add-ins people in this thread prefer, but do I want them in my eggs? Not so much. I may eat it on the side, but can't have it mixed into the eggs.

I also hate cheese (the smell of it actually causes me to be nauseous), so that could be another reason I've never been "into" omlets.

Other times, I'm in the mood for a good gut burnin' chili cheese omlette. :p

It's wet garlic season!!!
 
we just finished our first batch of the year and have ordered loads more for delivery next week.

PHOTO of what they look like

It's an immature garlic bulb you eat along with the stalk and leaves and looks and cooks exactly like a large spring onion/scallion.

Wet garlic season doesn't last long so I really urge you hunt these out and make the most of them.

They have to be the best single ingredient you can put into an omelet (along with some salt).

Just fry some oil (I use olive), throw in thinly sliced wet garlic (add any chopped leaves a minute or so later), just before they start browning add the beaten salted egg.

Unbelievably delicious considering the simplicity.

Please try this if you haven't done so yet. (They're called 'ajos tiernos' in Spanish - if you have trouble sourcing them, check an Asian grocery)
