Not sure about specifically for New Year's, but a couple of places I enjoy when in Amsterdam:
Bars that simply ooze history, like In t Aepjen or In de Waag are great and should have a good party going. If you're a beer lover, check out t Arendsnest or In de Wildeman.
Restaurants that might be good - Brasserie Harkema in the old side of Old Centre is fairly new and a hot joint. De Roode Leeuw in the new side of Old Centre is great Dutch food in a bit of a classier atmosphere. It's housed in the oldest covered terrace in Amsterdam.
For more restaurants check out these sites:

And local foodies weigh in at www.specialbite.nl

Tango,
Just found out yesterday that I'll be there also. Alas, it's a business trip so I'm stuck there for the Sat night stay and the fact that the return is $1,000 less than Dusseldorf.
Any suggestions would be appreciated. It's a last minute trip so I don't even know if things are open for NYE or NY day.

La Reve restaurant in the Intercontinental Hotel is fantastic! Great view of the water, amazing service, substantial wine list, incredible food. gets pricey, but still less expensive than comparable places in NYC or London.
Just a suggestion.
