There's a Tex-Mex place I went to once.
Of course there is Stars and Bars for American fare. But if you want good food, just ask the concierge of the Hotel de Paris.

The best suggestion I can make is to take you car and get out. There are plenty of good places to eat within 20 minutes outside of the principality. Seems stupid, but driving on the Corniche, I tried at least 6 or 7 restaurants and they were all good and to boot, at affordable prices. Besides, we enjoyed a great view of the coast.

As magexpect has suggested hire a car and take a drive. St. Paul de Vence is beautiful and the restaurant and hotel Le St. Paul are highly recommended; there is also La Bastide Saint-Antoine in Grasse; Chateau de la Chevre D'Or in Eze..... these are all Relais and Chateaux.
