My choice: Rare-ish with a medium grill surface. If the steak wriggles ever so slightly when sticking a fork into it, back to the grill for another minute

I must have been around 8 years of age when I discovered level of doneness of a steak could be customized. Mind you, this was at the rare family outing at Ponderosa in the 1970's. Since then it's always been medium rare. My go-to style at home is lightly marinated in Montreal steak spice and a few drops of Worcestershire sauce.
Once I found myself stuck at a restaurant dinner where all other participants only wanted medium well or well done. In fact they berated the server in advance about not wanting to see any pink in advance but of course wanted the best cut of steak.

Also very rare, almost blue. If it says moo, that's OK but I don't want it to run away when stabbed with my fork.

Generally medium rare, but it might depend on the steak. I will eat one prepared almost any way, including burned.
