In the ski resort of Verbier one can find decent and two excellent restaurants which are all rather expensive (main courses range from 35 SFR to 65 SFR).
My choices: Le Sonalon, always open, typical Swiss food. Great Croute au fromage for lunch.
2nd: Le restaurant de Monsieur Pierroz (1*) at the Rosalp hotel. It is a Relais et Chateau property as is the following:
Chalet Adrien, Rue de la Pretaire, very well prepared meals.
Ask me to e-mail you in case you have more ??? about restaurants in the "Swiss romande" (that's the French part of CH).
