Fresh Copper River Salmon -- per my fish guy at WF just arrived from Alaska earlier today -- very excited to throw it on the grill for dinner in a couple hours

Pretty decent dinner on Delta from RDU-SLC. Breaded chicken breast, squash, Caesar salad, roll and Cherry Garcia ice cream

I arrive into RDU and have to drive to Wilmington (2hr15 away). There's a Sheetz on the RDU Airport grounds so I think I'll swing by there and get one of their made to order subs for the drive.

Mr. Kipper cooked dinner tonight and it was very yummy. We had baked chicken, topped with cheese, spinach, alfredo sauce, sausage and bread crumbs. He served it with pasta.

We tried a slightly modified version of the Korean/Mexican carne asada marinade shown below on some skinless, boneless chicken thighs and grilled them over mesquite. Was absolutely delicious. I follow the recipe, for the most part, but add a splash of white wine to help it mix better in a blender. I also substituted a bit of honey instead of brown sugar, and because I like garlic, I used a bit more than the recipe calls for. We tried it on skirt steak and hanger steak as well, but I have to say, the chicken is the best.
