Need recipes for an easy sweet breakfast dish.

I’m going to a party next Saturday morning and need to bring something sweet. Anybody have any easy sweet breakfast recipes?

As long as you can bake it shortly before going, I suggest Mary2e 's french toast casserole. Otherwise, bake or pick up muffins the day before and bring those.

How complicated do you want it to be?

A box of vanilla cake mix, brown sugar/butter/flour/cinnamon, and a box of blueberries makes a very nice blueberry crumb coffee cake.

During SIP during pandemic, I made corn cherry scones once a month or so. Now I just buy 1-3 a week at arizmendi’s instead. Costs more and I really don’t bake gluten at all these days. I’m also rarely un-busy in my kitchen for 2-3 hours at a time!

Ingredients
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 tablespoon baking powder
  • 1/2 teaspoon kosher salt
  • 2/3 cup sugar
  • 1 1/2 cups cornmeal (medium grind, but fine is fine too)
  • 1 cup cold unsalted butter (2 sticks), cut into 1-inch pieces
  • 3/4 cup dried sweet cherries
  • 1 cup buttermilk
Directions
  1. Heat the oven to 425° F. Line 2 baking sheets with parchment paper.
  2. In a large bowl, sift together the flour, baking soda, and baking powder. Add the salt, sugar, and cornmeal and mix together.
  3. With a pastry cutter or a couple of butter knives, cut the butter into the flour mixture until it is the size of peas. Mix in the cherries, and then make a well in the center and pour in the buttermilk. Mix briefly, just until the dough comes together; it should be stiff and still a little sticky. (Don't worry about getting every last bit of flour.) Let rest for 5 minutes.
  4. Form the dough into balls about 2 inches in diameter and place them on the baking sheets a couple of inches apart. Place in the oven and immediately turn down the temperature to 375° F. Bake for 20 to 25 minutes, rotating the sheets halfway through, until the scones are golden. Cool on a wire rack.

Bread pudding. It can be served hot or cold and is so easy with many variations. I have made it using croissants as the bread and also donuts as the bread.

We have one lady that makes amazing homemade scones for every event we have, so I would prefer to do something else.

I make delicious, tender blueberry muffins. I put them into smaller muffin tins so they're not huge, which is great if you want to bring a lot to a party and most people want a little taste of everything.

I can't post the recipe here because Epicurious has taken away my privileges unless I pay , but just google "Seinfeld blueberry muffin tops recipe" by Epicurious. Trick is to be very gentle with the mixing. And you don't have to use whole milk, I use whatever I have on hand (usually 1%).

French toast casserole (a.k.a. bread pudding). Assemble it the night before and stick it in the fridge, bake it in the morning right before you go to the party, slap some foil over the top and arrive with it still warm.
