I've always hated pickled beetroot but now that the fresh version has become so ubiquitous, I've surprised myself by liking it.

White bread, butter, canned beetroot. Magic.

Also great on a salad sandwich, which I think is very underrated.

You've probably discovered just how easy it is to do. Look on-line for a "Refrigerator Pickled Beets" recipe. Of course you need vinegar and sugar, and the basic spices are cloves and cinnamon. Add in some white onion slices. Some recipes call for allspice. Mine uses a couple bay leaves and a handful of peppercorns. I make them in the morning and they're ready to eat by dinnertime.

Bonus: you can drop a few hard boiled eggs in with the beets.

Yep. Ten years ago I would have said awful things about beet roots, but I've since found the difference is simply in the preparation. Made a frosted goat's cheese and beet root salad recently and it was amazing. Would never have gotten the idea except from a restaurant. I've even taken to drinking those cartons of beet root juice.

years ago, i joined my college debate society, which was reforming after being defunct for decades. our faculty sponsor discovered a menu from society's last dinner, so many years before, which prominently featured a serving of "delmonico beets." the new debate society quickly became beet-themed, and of course they were featured at the first dinner of the new society.

i'd never had beets before, and discovered i love them.

A little vinegar, salt pepper, makes a nice salad. I have not tried bread though.

Definitely an Australian thing. You get a slice of beet in burgers down there.

As for earthiness taste, that seems to be a characteristic bred out of the beets where I am. Just not there anymore, much like how Argentinen merlots used to have an earthy bouquet 20 years ago.

Devon is actually one of the few Australian English words that changes depending on what part of the country you're from.
