It's been 40 years since I've had a hot dog, but that doesn't mean I don't have opinions about right and wrong, here ;-)

Start with a Top Dog (Berkeley, CA) tube steak. http://www.topdoghotdogs.com/
KIELBASA (POLISH)
2/3 pork, 1/3 beef - hearty
CALABRESE (ITALIAN)
Pork, paprika, chili, fennel — semi-hot
HOT LINK (LOUSIANA STYLE)
Beef and four kinds of pepper — h-h-hottt

No chicken dogs.

Wrap it in fresh, quality bread. White flour, maybe wheat, if you keep it light.

Add: Onions. Yellow mustard.

Done.

I'm in Chicago so.. a bunch of disgusting stuff.

I'm a simple man, I want grilled onions and spicy mustard on my dog.

Disgusting? Yellow mustard, neon relish, chopped onions, sport peppers, a spear of dill pickle, tomato slices and celery salt on steamed poppy seed bun. Perfection. :)

I miss Chicago hot dogs. I like polish sausage with mustard, onions and sauerkraut.

I was trying to figure out how I wanted to use my Alaska Airlines upgrades certs towards a destination, and that comment helps a lot! A couple of those, with a decent beer, sound like the definition of happiness.
