I think of them more as fillings than toppings, and I rarely order omelets, but spinach-bacon-feta, or spinach-bacon-swiss with a bit of hollandaise as a topping are my favs.

lobster & artichoke? Wow.

-> shallotts, sweet summer tomatos & lots of cheese
-> liked egg white omlette with green asparagus and north sea sprawns. Mjam and light.

But than again, I prefere poached eggs on toast prepared by a decent chef

I understand what you mean. It's just that I couldn't exactly think of the exact right vocabulary to describe the things that can go together with an omelette.

Smoked bacon, wilted spinach, thai chilies and cilantro (yes I know that a lot of people don't like it. I do. So hush.). Topped with a strong bearnaise.

Yum yum.

ham, sausage, green peppers, onions, and white cheddar.

Equal parts ham, sausage and cheddar cheese. Served on a Kaiser Roll (preferably) or poppy seed bagel.

Once I had an omelet of shrimp, crab and cheddar cheese and that was amazing but I'm afraid to try it again for fear it won't be as good the second time. The first one I mentioned is a tried and true one for me.

That would go in the omelet, not on top of the omelet. Just my opinion, of course.

My favorite is bacon, mushrooms, and cheddar cheese. If I don't get that combination, then I usually will have spinach and some other ingredients.

You guys forgot hot sauce! Gotta have it on any Denver-like omelettes.
