SW-- Im a big fan of all your F&B posts here on FT... I dont know if you have plans to come down to EZE but if you do, please let me know... I would be very happy to organize a dinner or two during your visit...

to answer the tip question, I guess only if there was a tip jar I might tip but only if I felt it was earned.

Sitting at the bar assures that the chef will use the best cuts of fish for you. Ordering takeout or a California roll (yuck) gives the chef an opportunity to offload the lesser fish.
