I always try to sit at the sushi bar as I've found many a chef to be very proud of their craft and will offer suggestions to try things I might not have or even to offer small samplings of what they feel is best or a new prep they are trying. I enjoy this type of interaction^

to answer the tip question, I guess only if there was a tip jar I might tip but only if I felt it was earned.
Amen.... I like the bar for the exact reasons you mention.

SW-- Im a big fan of all your F&B posts here on FT... I dont know if you have plans to come down to EZE but if you do, please let me know... I would be very happy to organize a dinner or two during your visit...

Sitting at the bar assures that the chef will use the best cuts of fish for you. Ordering takeout or a California roll (yuck) gives the chef an opportunity to offload the lesser fish.

Excellent, excellent book on the sushi biz called 'The Sushi Economy', by Sasha issenberg.

I don't think they're waiting for something, but if the food and service are good, I tip them...
