One Weekend Cooking School

To celebrate my wife's upcoming birthday I'd like to find a one-weekend cooking school that we could attend. She's a great cook, watches a lot of Food Network shows, has a ton of cookbooks, etc., and I think she'd get a blast of going to a weekend or even one day cooking school. The preferred weekend would be April 24-25. I appreciate anyone's suggestions.

As another option a nice Chef's Table somewhere would be great too. Travel isn't a problem for us.

Both great suggestions and I do appreciate them. I didn't know about the ones in Austin. My sister-in-law (wife's sister) even works for Central Mkt.
