Haven't had it for a while, not unlike Dover Sole from memory.

I am not a great fish eater, but often order John Dory. It is a white fish, not really fishy tasting, I think thicker than sole. It is very mild, can be grilled, I have always had it with sauce on the side. Hope that helps. It is usually at higher end resturants.

It's a flat white fish. In France, it is called "St. Pierre." I have also seen it called "St. Peter's Fish". The flavor is very mild.

Dover sole is a good comparison though the species are unrelated. John Dory is a great eating fish, one of the best to cook with, and has a firm texture and mild sweet flavour. Top notch.

A deep sea fish, hence the flat shape, IIRC.

A prince among fish, in terms of the final product. Very popular in southern hemisphere countries I've visited.
