If it's supplied by Carnival it's probably Folgers instant 
Seriously though, I was on a Carnival ship last year and I really can't recall the coffee selection, I do remember that it tasted fairly hotel-room generic.

I believe Princess uses recycled bilge water...
Truely Princess' coffee rates amongst the worst attempt at brewing I have ever had including hospitals and Dennys. They apparently use a type of coffee syrup and mix it up in big batches. It was the only part of cruise that was less than acceptable. They do have a small brew pot in the bar We knew about this in advance of our first cruise. So we brought our own grounds, filters and mileta cone to brew our own coffe each morning in our stateroom. We simply ordered two full pots of hot water from room service and voila! Fresh brewed home brand favorite on the balcony looking out at the Mediterrean.
We are going on a Crystal Cruise next and I plan on drinking theirs. I am quite sure no filters or grounds needed on that line!
Yippeee only 31 days to go till the next cruise.
