Hitting a spend minimum

Can I pay off my girlfriend's credit card bill with my card? And would that negatively impact my credit?

How are you going to pay off her card with your card?

If you do it as a cash advance, you will pay fees and it won't count as "spend" anyway.

There are other threads about making a spend requirement, including:

a) Make a large payment on your cell phone or cable bill. If your bill is $100 a month and you pay $1200, you have to pay the $1200 now but then you don't have a bill to pay for a year.
b) Get an extra card for a friend or relative who will help you out by charging things and then giving you the money.
c) Call officialpayments.com and use your card to pay federal income taxes. There is a 2.49% fee. If you overpay your taxes, you can claim it as a refund. If you do this very quickly, it will count as an estimated tax payment for tax year 2011 (you probably only have until Monday to do this) and then you can file your taxes for a refund next month.
d) Amazon Payments accounts allow you to transfer up to $1000 a month funded from a credit card. Send that to a friend or relative who will then move the money to their bank account and send you a check or transfer of some kind.

Seaching for "minimum" would have immediatley brought you to this thread from just days ago, which answers you question (no, btw):
