Spending categories for foreign businesses

just wondering, how good are credit card companies (esp. Chase) at managing spending categories in foreign countries? Specifically, I am going to Japan next month. If I use Chase Sapphire Preferred for dining, will I get 2 points for each dollar I spend?

Also, I couldn't figure how to easily tell which charges are in the bonus categories with Chase. I could only find how many bonus points I got in total for a period, without knowing exactly which items are earning bonuses. Is there a way to do this?

And if some of the bonuses for dining don't show up, would it be possible to ask them to correct afterwards?
