Sorry to say, I don't fly the route often enough to give you any advice. I only go to Europe when a trade show beckons, not for regular customer travel. Last year, I went to Nuremberg, Dusseldorf and Birmingham, UK; the year it will be Brussels, Paris, Birmingham and Manchester.
There is a break on Saturday night stays, so the Saturday flight may be more crowded. Sunday may be crowded for people who want to get started at work promptly on Mon morning. So, my deduction is that Mon-Thu have less traffic than Fri-Sun. But this is complete speculation.

Re: How long will status last - Tricky. Sign up for challenge to START on 1st or 16th of any month. STARTS from 01Jan-01Jun will only get you status for rest of year (Feb03 expiration). STARTS from 16Jun-16Dec gets you status for rest of current yr plus next year (Feb04 expiration).. If you do both, you can do gold challenge now, then should wait to start Plat challenge on/after 16Jun02.
Re: Qualification - Only Q-points, not segments or miles. On any carrier on any fare that will earn status miles on AA (including all OneWorld Carriers exc BA x-Atlantic)
Re: FF Account - I don't know of any sign up bonuses, if u do, please let me know as I am starting 2 new accounts soon! Remember that ALL earned miles on AAdv (including bonuses, credit cards, stupid Kellogg's certificates, etc) add up for lifestime million mile (Gold) or 2 million mile (Plat) status, so unless you have only a few earned miles on AA, I would stick with one account. Mr Fish has only 1000 miles sitting in his AA acct, but lifetime well over 500,000.
