Need Award Booking Clarifications (Stopover, etc.)

I apologize that this is probably a very “easy” topic for some but after searching and reading up on it I am still unclear. Stopover, open jaw, it all has me confused. I am looking at booking an award trip and need to understand if this is valid. FYI – I have no status and it will be in Y.

Here is what I am trying to do:
IAH – IST (outbound, will stay several days)
IST – LHR (this will be a stopover staying several days)
LHR – IAH (return)
Can that all be done as 1 RT? If so what is it called so I get the description correct?

If not allowed, is it valid to do this (and just pay for the middle part)?
IAH – IST
LHR - IAH

I believe that you're fine (and someone more knowledgable will surely clarify, if I'm wrong).

IAH is your origin
IST is your destination
LHR is your one allowed stopover (on the return)

This is fine.

You're flying IAH-IST, and on the return you have a stopover in LHR.

You're not even using your open jaw.

Okay, that sounds good so far. Now what would happen if the leg of IST-LHR became:
1) IST - STN (London Stansted)
or
2) IST - MAN

Would either of these still be considered a valid stopover for LHR??

Should be ok.

LHR/STN are probably co-terminals so it's still a stopover.
MAN/LHR are not co-terminals, but you're allowed an open jaw anyway.

That reward is completely legit. I booked EWR-(AMS)-IST, IST-(CDG)-SOU, BRS-EWR as a single ticket. In my case I had both a stopover and open-jaw in the UK. If you can make it work with your desires such routings are a gem in the CO OnePass program.
