Tenative lets say Thursday mid-day.
I propose one of the restaurants in either the Venitian (middle of nearly everything), or near the Convention center (Hilton? or the newer Marriot across the road)

Since Thursday if the first full day of CES and getting from the CC to the strip may be a bit of a problem (bus), I would vote for somewhere near the CC. The Hilton would be fine.
