7:00pm: Claypot dinner - claypot is a cooking style using clay earthenware cooking pots. It is a local favourite in the winter. Famous is the lamb/goat/mutton stew as well as rice cooked in the pot with toppings. It is meant to add warmth to the cold winter days. Rice cooked in claypots will absorb the flavour of the topping as well as a crispy crust at the bottom.
For the adventurous snake soup is another winter delicacy.

I am stying in Kowloon at a small guesthouse for my 2 nights in HKG. I will be really close to my ramen shop if anyone is interested. Otherwise I am happy to share hot pot or other local food with others too!
For those who do not know and are staying in Kowloon or near bus A21 is the cheapest and most direct way to get to city. Bus has free wifi and luggage storage. Double decker.

Since I'm getting in 11pm on the 15th, I am considering staying near the airport and wandering around Tung Chung/Ngong Ping etc. on the morning of the 16th and head downtown mid/late afternoon. Would be up for dinner/horse races that evening, and whatever on the 17th.
Or, since I also leave for SIN at 9am on the 18th, I could do things in the opposite order and head straight into town on arrival, and do Tung Chung etc. afternoon/evening of 17th and stay out there before flying out the next morning.
Or just spend 2 days in town So far I think it's just the 3 of us so there are probably many reasonable variations...

I am in - tickets booked as far as TPE, likely to be arriving in HKG on either Saturday 12th or Sunday 13th. Plan is to make it to Macau (for historical bits, not gambling) at beginning of the week, then back to HKG for pre-Do. Definitely interested in going back to the horse races on Wednesday, was last there in 2014. Once my Avios transfer I'll be booking a flight to SIN for Friday (18th).
Definitely up for any food adventures!

Double check cash prices to SIN too! Departure taxes out of HKG are on the high side and low cost carriers operate the route. I am flying Scoot 787 business class for $150 one way booked at scoot.com. They offer a discount for signing up for their emails on your first booking which I used on the J ticket. I am departing Friday from HKG as well.

Great news! I am fully confirmed as well. More aircraft swap drama happened with my Lifemiles booking but I got it sorted. That was a FUN (not) call with Avianca to get my downgrade fixed without fee.
Long story short I land in HKG at 11:25AM on Jan 16 local time on Air China.
I plan to head to my guesthouse, get Ramen, and probably relax some before the horse race.
Be sure to get your octopus cards at the airport!
