Thanks again for all these suggestions. I am hoping to hit McCawleys or NYPD tomorrow.
I've been getting pulled around by my colleagues so haven't been able to really direct us anywhere. However, did want to give some feedback for others who may need some options here. Here are some places I have been and my opinion:
Trattoria Italiana Da Angelo (Futian) - Very good and I thought very reasonably priced
Flavorz (buffet at Ritz Carlton) - Average and way overpriced
Shop Kitchen (buffet at Hyatt) - Above average, overpriced
La Terrazza - Good, reasonably priced
Din Tai Fung - Awesome, reasonably priced (yes it is Chinese but not really)
Also I've eaten a number of times at the lobby level restaurant at the Four Seasons - I really like this place. Small but really high quality salad bar and a decent mix of western and asian options.

You should really spend more time in Shekou... good food, and a lot more color than 5-star hotels. (I eat almost exclusively Western food in China, and my standards are pretty high.)
