Regarding the fork, I've always found it amusing that the majority of restaurant/airplane knives are dull. The forks, on the other hand, are usually quite sharp and pointy.

The threat of a repeat 9/11-style hijacking even if small sharp objects were allowed onboard is remote at best given the (unrelated to screening policies) differences between today and 9/11.

Personally, I don't have a problem with flight crew bringing whatever they want through security. First, if the pilots intend evil, I doubt they'd need any "accessories", since they're in control of the aircraft. As for the FAs - if they intend evil, it doesn't take much creativity to figure out what might be helpful from the galley and/or service carts.
The real problem is that all the "security measures" are nothing more than a "floor show", put on at taxpayer expense, to "impress" the travelling public.

"Accessories" taken through security by a pilot may be used by someone else, like in: American Airlines pilot brings in weapon, hands weapon to terrorist, terrorist takes down United flight.
Everybody can be bribed or blackmailed into anything for the right price or with the proper threaths. Pilots and other crew are no exception.
