Chase Rewards Plus, ease of flight redemption?

I am looking at the Chase Rewards Plus MC, which gives 5% points at grocery stores, drug stores, and gas stations (not to be confused with the Chase Cash Plus Rewards card.) Would like to know if anyone has experience with redemption of the points for airline travel. What is the cap on the ticket value? Is it possible to pay the difference in fare if it is over the limit? Is it subject to certain fare class? I have a card that earns similarly from Citibank but have found that redeeming for the flight that I want is not so easy, even more than 8 months ahead of travel. The only option that was allowed to me through Thank you redemptions for a flight from DTW to MCO over Thanksgiving was one that left at 5 am and changed planes twice! I know that's a busy time in the airline industry, but I usually do fly over holiday periods. My Cap One card truly is "no hassle" as far as flight redemption, even during holidays, but is also less valuable as far as points accumulation is concerned.
