We were in Belize with our kids a year ago April and had a fantastic time. We were in the jungle and on the beach, but the jungle was the best. Lots of adventure-type stuff available, including floating on inner tubes a mile into ancient Mayan caves, horseback riding through the jungle, lots of great flora and fauna everywhere. Adventure-type stuff is not cheap, but other than that it's quite reasonable. We stayed at the Banana Bank Lodge, which has its own stables and has a bunch of rescued wild animals available for close-up viewing. Our kids loved this place so much they insist they're both coming back for their honeymoons (they're only 9 and 13 so this is not imminent). On the beach, we stayed on Ambergris Island, which is the spot with all the action; it's old-fashioned, third world, sand streets, quite charming we thought (though I think some of my friends my think it's a little seedy). Some of the other Cayes are reputed to be quieter with better snorkeling right off the cayes (on Ambergris you have to take a boat to snorkel). Belize has great web sites, including one that I think I remember being called belizeforum.com where travel advice is traded.
