Morning, Afternoon, or Evening? There is a casino nearby, 5 hours with security/immigration/customs in and out won't get you too far from the airport.

You could go to brunch at the Marriott about 10 minutes from the airport. Traffic is generally bearable on a Sunday and you could get to downtown San Jose to briefly see the national theatre and adjacent gold museum. Zoo Ave is about 10 minutes west of the airport and you could see their operations of aniimal rescue and such.
