I am not sure but maybe someone here can help
I want to fly from HKG airport to Macau with an helicopter.
What is the best company?
can I buy tickets online?
any tips?

From Hong Kong airport there is no scheduled service - you would need to arrange a personal charter.

There is a scheduled service from central Hong Kong to Macau run by HeliHongKong. Details on the website. They also do charter services.

Also bear in mind you can't transit airside unless you are arriving on a private jet into the general aviation section. If not, you will have to clear HK immigration, transfer to the general aviation area, depart HK immigration, fly to Macau, then clear Macau immigration. .

If you want a simpler connection you might consider the direct ferry transfer from the airport, which is boarded airside.
