First class: F, A
Business class: J, C, D, I
Full fare economy: Y
Discount economy: B, H, K, M, L, V
Deep discount economy or group rate: S, N, Q (No miles can be earned).
So, if I have a flight tomorrow, and seatcounter shows 0 seats available in every class, does that mean the flight is sold out? Oversold? Does this mean I have a chance to get bumped?

No, not if the flight is for tomorrow.
CX zero out flights when a flight goes into airport control, usually within 24 hours of flight time. If it is zeroed out prior to that, than it is probably oversold.
