How to book codeshare flights
I understand that CX and LA have codeshare flights. But I can't book flights going to LIM from either CX or LA sites.

Wheres your booking origin? I suppose there may be routings restrictions on flights to LIM /SCL

If origin from Asia I remember routings rule restricted via AKL/LAX/JFK .

I tried to do SCL-SYD-HKG earlier this year. Couldn't get it priced despite multiple calls and there supposedly being CX code on SCL-SYD. One agent said to book on the CX code, CX has to be the longer leg, which doesn't make sense given on SCL-SYD-HKG, LA is always going to be the longer. I gave up in the end and just booked seperate tickets.

Bookable and priceable. Call CX or ask a TA if you cannot buy online. You can get ticket issued by CX if SCL-SYD is CX-coded. However, if SCL-SYD is LA-coded, it is correct that LA should be the issuing carrier, as it is the trans-Pacific sector.

As I said, tried to call CX multiple times and they just couldn't do it. No clue why. Just booked separate tickets and moved on. Probably CX IT just being useless again.
