Transit in Taipei

In the old pre-Covid days I frequently went to TPE to start my long-haul journeys from there (TPE-HKG-XXX), much cheaper business class fares. I have a lot of AM expiring mid-year and I need to book (and fly as I'm only here over Dec/Jan, although strictly you can fly them later) 2 CX flights to extend them. I was going to do HKG-TPE-HKG - has to be two one-way tickets as no same day returns available on the website even though the two one-ways that make up the same return ticket are. I wondered if anyone had done the Taipei transit recently - is is still possible, I'm not entering Taipei just transiting so hopefully no testing etc and will I be able to get on the one-way HKG-TPE flight in HKG as long as I also have the one-way TPE-HKG flight booking with me and all confirmed?
Grateful for any insight on the experience. Thanks!

Taiwan is fully open. Upon arrival, you will receive 4 antigent testing kits to monitor your health. There is no form to fill up.
Unless you have sympton of Covid, you are free to enter and depart from Taiwan.

But, I could take a flight from HKG, and enter Taiwan with a Canadian passport, correct?

For now yes but keep an eye on any change in policy.

So entry restrictions are by nationality and not point of origin, or residence?

Yes, Taiwan is only allowing tourists from visa-exempt countries. They have not completely restored the pre-pandemic visa policies yet:

That was also exactly my "confusion". I am planning a trip to Taipei for Christmas, but only if I can do HKG-TPE-HKG using my non-HKG passport, and regardless of my current residence as HKG.

I did go to the online arrival declaration site and populate the fields with my planned itinerary and with my personal (passport, home address, etc.) details, and the site did accept and register my visa-exempt status for entry on 24 Dec. There was no reject.
