I believe check-in for US-bound flight can only commence 24 hours before departure, so if you wait for a bit you may be able to. If you are taking the airport express to Hong Kong downtown then you can even do it there, to reduce your wait time. Others can comment.

I suggest re-checking in after a lunch at the airport.

Got a related question thought I would ask on this thread instead of starting a new one.
Wed 4pm will head to Guangzhou by train for meetings.
Thu 0955/1125 KA781 CAN to HKG, then CX884 to LAX 1.5 hours later at 1255.
I have baggage which I prefer not to lug into China back out again.
1. Can I check in the baggage at HK station on Wed after 1255 (within 24 hour rule) or does this have to be at the airport?
2. As this would be for the HKG-LAX leg only, would this matter that I am not doing HKG-CAN by plane? (I have done this many times before on turnarounds for TPE where I check in at HKG for only HKG-XXX so baggage does not go to TPE.)
3. Would it make a difference that this is a US flight?
Thank you in advance.

It shouldn't be a problem to check in your bag in HKG - people add bags at interim stops all the time. They will probably remind you that you must fly the CAN-HKG sector or else the rest of your ticket will be cancelled. You can tell them you are taking the train to CAN for meetings.
For US flights there used to be restrictions where you had to check in bags at the airport. I don't think this applies anymore.

You can check in your baggage at HK station all day Wednesday. This is because you can utilise the in town check in the whole day prior to the day of your flight.
