In J and F I've carried a carry-on plus laptop bag and a suitbag without any problems.

Welcome to FT!

While I wonder why so obsessed with 2 bags in general you should be fine with carry-on + backpack + a bit of other items without being bothered; just that you find your own overhead space/put it under your seat, especially be able to lift it yourself. Think more on "be considerate to others".

HKIA security is more concerned about that than CX on carry-ons. If you can pass security, you usually have no problem.

Two small handbags - that can just be the same as one carry-on and one personal item.
