once you're in i don't think you can come back out. your friend leaving around 1800 would probably go in around 1700. you'd be inside from 1700 til 0300. that's a long time unless you have lounge access.
also, if you have luggages to checkin it may be a different story too. i remember back at Kai Tak, i tried to checkin for a CX late afternoon flight early in the morning. they said i couldn't since no luggage carts are down there for my afternoon flight. i'm not sure if things have changed now.

I think CX allows check in even the night before, at least for the Airport terminal. So early check in of luggage should not be a problem.
But I do not think you can come out after checking in. That is actually an offence, in many places.

the security people will let you in without a problem with your boarding pass
you could also go back into Hong Kong after you send your friend to the gate
if the immigration officer ask you some question just tell him that you saw a wonderful gift in the shops outside you need to buy and he will be satisfied aslong you are not travelling with an Indian Passport :-)

I've never heard of anybody getting back to the landside in either the old or new HKG. It's probably technically allowed, but you probably will have the passport stamped two more times, and may probably face some questions about why you went in the first time, knowing that your flight doesn't depart for another 8 hours, etc...
