Another thing I thought of is for the YVR-JFK route, there is no caviar, but the balik salmon is served. Does that mean that they would possibly be serving the caviar now on this route?

This salmon isn't raw, it is smoked. Gourmands consider Balik salmon to be the best in the world. The company that makes Balik now, is in Switzerland. The recipe and smoking method were given to current producer by the grandson of the original smoker to Tsar Nikolaj. The salmon itself is sourced from the wild in Norway.
Doesnt change the ecological system of salmon in general. Its decent salmon, yes. Decent food? Its still salmon.

Should i bother saying if you dont hv a degreee on ecology dont comment on it. anyways, it does not change the fact that salmon lives in rivers for half its life and ingest and retains disgusting stuff that noone here believes in because balik is farmed in norway by a swiss company. Certain inorganic stuff is still there - Thats salmon.

Having said that, they do taste good when i last had it. But its still just salmon which is overated and its not something i crave for.

I've had (not on Ana) some Chinese & Columbia River caviar that's A LOT better than the mushy stuff on CX. I've always wondered if it's mishandled along the CX supply chain and is getting frozen at some point. It never has 'that pop'. As bad as it is, it's still a fine accompaniment to the Krug.

I think Asiana or ANA (don't remember which trip report I saw) sources their caviar from Beverly Hills Caviar.

I love the Balik Salmon, so as long as CX is going to offer a decent alternative appetizer option, I am okay with this new arrangement.

I am terrified at CX's "enhancement" as you don't know what is in store for you!

I think CX is currently using a French farm brand of caviar.
Either way I hope they have proper belinis for the caviar and maybe an alternative appetiser. I will miss the balik for sure!
