I'm surprised to hear this. I assumed most airlines had a policy similar to that of BA's whereby FAs are not permitted to serve meals from a lower class to pax seated in a higher class - so if there is insufficient catering, then there will be no op-up(s). I am, of course, no expert on CX... or BA for that matter!!

I concur with you - but I haven't had any situations where I have needed special service (eg delayed flights, missed connections etc).

I had one pretty bad incident there (inbound aircraft depressurization described here). There was no aircraft to fly CX881 back to HKG, so they put us up in a hotel for the night and flew us out the next day.

I thought the LAX staff handled it admirably. It was all a giant pain but they did fine, given the circumstances.

I did not get an op-up. I paid for the upgrade. To be fair, they did warn me on the ground before I paid that they don't have enough time to load meals onto the plane.
