Sirloin steak on board

Here we go again! I gave up on BA sirloin years ago after several attempts but only ended up with something akin to a pigs ear in terms of cheweyness... actually I have never chewed a pigs ear so this is from my imagination. Then a few weeks ago on a QF first flight to SIN I bravely went for the fillet steak.... ah, what was served up would have been better tasked as a shock absorber on one of those monster trucks that Americans like driving across Arizona.

Then.... (drum roll please), yesterday I took a Fiji Airways flight.... and somewhere in the recesses of my mind I remember that their forerunner, Air Pacific, had once done a half decent job of sirloin. So I opted for the sirloin in a pepper sauce.

Well... the rest of aviation cooking should take note, Fiji Airways succeed with sirloin; tender, juicy, not overcooked and very tasty.

Come on BA and Qantas, wake up! go and ask the Fijians how they do it.... and how come they play such good rugby!

My late Labrador could give you lessons on eating pigs ears, one of his favourite treats.

I am sure there is some comedy value in using the term “pig’s ear” and BA in the same sentence. To bring this thread back on topic, I avoid steak on planes as I have never had them to my liking on any airline.

If I was a crew member, and a ‘helpful’ passenger told me how to cook something not sure how I’d take that..

Fly Japan Airlines. I have had perfectly cooked filet of deer on JAL. Even in economy second meal on long haul they can managed perfectly poached eggs.

The very best steak I've ever encountered on an aircraft was on an ex US Airways B757 from Philadelphia to Dublin some years ago. There was one cabin crew member working the business class cabin and she was absolutely outstanding. She ran a brilliant bar service, all drinks made to order rather than dumped on the tray and for those having steak (almost everyone) she asked how they'd like it cooked. I was medium rare and my friend next to me was medium well. They were both served at the same time and were spot on. The service was so quick I even managed a half decent sleep before landing! I just wished I'd got the lady's name who worked the cabin that night as she really deserved proper recognition for an outstanding job.

Actually there's a restaurant in Greenwich Village, NY that has pigs' ears on its menu (or it did) with salad. They are very crispy and quite delicious.

Pigs ears, and other similar parts, are a renowned national dish in Brazil. It’s called feijoada and there are whole restaurants specialising in it; nothing else served. It’s sort of a bean stew.

In Ukraine they served them sliced thin and fried. I didn't partake but my niece loves them.

The Duck & Waffle restaurant on Bishopsgate serves a delicious dish of crispy pig’s ear.
Alas, no sirloins in sight, despite being high up in the air.
