Flying out of T3 on Thursday with AA and wondering which lounge is most likely to be serving the latest offering (if any given it's an earlyish flight)

The best bet would have been JAL as the Japanese go mad for the BN... but JAL uses BA... so I think you are out of luck...
At the office here we have a tasting each year just for the fun...

BN is a relatively cheap wine so I would assume it can be easily catered in lounges without breaking Mr. Cruz bank.
The BA lounge is a good shout as they regularly update their wines and usually have 3 reds and 3 whites on rotation (plus 2 Champs).
TBH T3 is a OW treat, so you can also pop by QF and CX lounges to see what's there.

On the one hand Aussies are pretty wine-y, on the other hand Qantas is extremely parochial and almost only serves Australian and NZ wine (except Champagne). You will drink flinty whites and overly fruity reds and you will like it (I'm OK with flinty whites, fortunately). So maybe they'd have Beaujolais Nouveau?
