I prefer Hanoi, but I always like the conservativ touch. Saigon was to new, to busy for me.
And if you want to stay at a beach, you could also go to one of Vietnams Islands, like Phu Quoc.

If my aim was to relax, I'm not sure I'd go to any of the big cities... and definitely not Hanoi. I can hardly imagine going to Vietnam without seeing the capital, but I've never found it in any way relaxing!

So if youre goal was shopping and eating for a two day trip......would Saigon be the logical choice?

You will do much better in Bangkok, Singapore or even Kuala Lumpur.

Saigon has good restaurants and a lot of shops and shopping centers with all the luxury brands (wonder who besides tourists can afford to shop there).

Still I think Singapore would be more the logical choice for extensive shopping trips.

If Vietnam was the destination you really wanted to visit, then I'd chose Saigon based on your criteria. Keep in mind the luxury brands cost more there than they do at home. Lots of very good restaurants. The only food I haven't found worth eating there is Mexican food.

I really hated Nha Trang - the party city of VN. Hoi An is considerably nicer/smaller and has considerably better food. Phu Quoc is excellent too, but there's little there except a nice tropical beach. If you want awesome beaches, you should not even be considering Vietnam - stay in Thailand.

Nha Trang has more entertainment/night life, highrises, crime and drugs. It is not too far from a really nice little place - Dalat in the Central Highlands.

In my opinion, the best online resource for SE Asian info is Travelfish.org
