Have AY SAAver award on hold, can I add connections?
Per title - Have AY ORD - HEL for 57.5K miles in J. Will AA let me add an LAX - ORD or HEL - VIE and maintain 57.5K miles? Am fine with Y on the connections

If you're adding domestic segments on AA, just make sure the flight is available as sAAver space (T or U), not web special.

Also you should have no trouble getting business class for the europe connection. But if you cannot see a route LAX-ORD-HEL on the web search there is likely no sAAver availability (in any class) so you might have trouble adding that LAX-ORD segment. You can add it if it's available. You can check EF for availability as well.
