1) IMO it is way too early in the year to even consider an EQD run for an amount so small. Who knows what might come up, or what else might be cancelled?
2) Rather than strain yourself looking for an out-and-back that fits your schedule, instead consider up-faring a current itinerary to a slightly higher coach fare bucket. This is usually an easy way to add $75-100 to a coach fare without wasting a day, especially if you aren't in need of the segments.

I was of the opinion that FLG would not be cheap as AA is the only game in town. I would think given the capacity and carriers on the route, PHX-LAS would be a winner.

There's always the possibility that a flight unexpectedly posts by distance rather than fare in the remainder of your flights this year. I would just wait it out for a bit and see if you end up ok.

Now debating LAS over LAX. For a few more $$ I could be back to PHX about 30 min earlier, which is important as I'm timing all of this with picking someone up at the airport.
I haven't been to LAS in ages. How is the on time performance versus LAX?
