This all happened within a span of 45 minutes.
For example:
Flight listed at 100k - hit booking selection, now 105k
Transferred 5k more miles to account
Flight listed at 105k - hit booking selection, now 110k
Transferred 10k more miles to account
Flight listed at 110k - hit booking selection, now 115k
Finally booked
Would have putting it on a hold prevented this ratcheting up scheme? If so, really good to know.

It seems odd. Were you booking directly through AA's site?
