Multi City - Adding Extra Flights
Is there some way of adding in additional flights to the multi-city screen on AA.com which has spaces for only 6 flights?

You may not need to specify each airport as an origin and destination to force a flight. LHR-Lubbock is going to route you LHR-DFW-Lubbock, anyway.
If that insight isn't sufficient in getting the full flexibility you need, phone to AA or travel agent.
