i was able to find a bunch last week for bookings until EOS. Not sure if they recently changed that, but was able to use up the rest of my 2020 GGU upgrades before they expired.

^ Bingo. The lowered I class flights, pretty much systemwide, have rendered U space inconsequential, and GGUs arguably worthless.

There are a few exceptions, when used in tandem with the CF, but very few.

How is this any different from variety of discount offerings we have seen the past few weeks, seemingly a new one every week? Longer time frame to book?

With the only exception being the Friends & Family discount (since expired), this is the only one that will be currently offering a discount off the First class cabin.

GGU space has opened up at least into May. I was able to use several earlier this week. Not sure of your routing.

Sure, they might be useless, OTOH, a $120 F ticket that's $50 more expensive than Main, that's also going to yield 2278 EQM (and gives you a free trip to the Alaska Lounge) isn't exactly the worst thing ever. GGUs don't have much of a value proposition if F is cheap, but... F is cheap across a lot of the network, so there's really no way to give them value.

I think the best use of GGUs in 2021 would be Hawaii flights where the I fares aren't as appealing or plentiful, particularly from PDX/SEA.
