Yes this is possible but depends on what you mean by legs. If you mean outbound in economy, return in business (or other way around) then you can book this directly on the website of AF or KLM.

Hard to say without specifics, but you would usually buy a xxx-zzz business fare that covers both legs in business.
I guess it's a short-haul connecting to long-haul itinerary and don't care about C or would even prefer an emergency exit Y seat in SH?
